Single Undercut is where material is removed from where the middle finger of your trigger hand rests. 

The Double Undercut is where material is removed from where the middle finger of your trigger hand rests as well as where the middle finger of your support hand rests. 

Please note that these options are not available on the following models:

G48/G43/G43x/SIG/XD/M&P/HK/P80
